Bunnahabhain Distillery sits on the Sound of Islay on the north-eastern coast of the island, in one of Scotland's most remote whisky-making locations. Founded in 1881, the distillery takes a deliberately different approach to many of its Islay neighbours: its signature spirit is largely unpeated, allowing the character of the whisky, oak and coastal environment to take centre stage. Bunnahabhain 12 Year Old is matured in a combination of bourbon and sherry casks and bottled at 46.3% ABV without chill filtration or added colour. The result is a richer, more textured style of unpeated Islay malt, combining sweet fruit, dried fruit, nuts and vanilla with a subtle influence from its coastal setting.
Colour: Natural russet gold with a warm amber glow.
Nose: Fresh and aromatic, with ripe orchard fruit and dried fruit alongside vanilla, floral notes and a gentle hint of sea air. Blackcurrant jam and cloves add darker fruit and spice complexity.
Palate: Rich and rounded, with sweet malt, sultanas and roasted nuts at the core. Vanilla, caramel and gentle baking spice add warmth and depth, while the sherry cask influence brings richness without overwhelming the lighter character of the spirit. A subtle coastal salinity provides freshness and keeps the whisky focused.
Finish: Long and lingering, with roasted nuts, caramel, dried fruit and gentle spice gradually giving way to a delicate spray of sea salt. Full-bodied and warming, but without the heavy smoke associated with many Islay malts.
- Food Pairing : The whisky's combination of dried fruit, roasted nuts, vanilla and gentle coastal salinity makes it particularly good alongside smoked salmon, roast pork with apple, mature cheddar, pùté or a rich nut-based dessert. Its sherry-derived sweetness also works beautifully with dark chocolate and dried-fruit desserts, while the subtle saltiness provides a useful contrast to richer foods.
