Tobermory Distillery was established in 1798 and is the only whisky distillery on the Isle of Mull in Scotland's Inner Hebrides. Its coastal setting is an important part of the character of the whisky, with the distillery describing a subtle maritime freshness and salinity influenced by the island's sea air, wild flora and harbour surroundings. Tobermory 12 Year Old is an unpeated single malt matured in American oak. It is bottled at 46.3% ABV with natural colour and without chill filtration, preserving a fuller texture and the whisky's natural character. The style is deliberately fruit-forward rather than smoky, combining citrus and orchard-fruit notes with vanilla, oak spice and a gentle coastal savouriness.
Colour: Natural amber-gold.
Nose: Bright orange and citrus aromas lead into rich orchard fruit, fresh floral notes and sweet malt. Vanilla, oak and gentle spice add warmth, with a subtle maritime character underneath.
Palate: Medium to full-bodied, with sweet orange and citrus alongside creamy caramel, vanilla and soft malt. Cinnamon and clove bring gentle spice, while the American oak contributes richness and structure. A faint salty freshness gives the whisky an interesting coastal edge.
Finish: Long and lingering, with vanilla, sweet malt and warming spice gradually giving way to a light citrus and coastal freshness.
- Food Pairing : The whisky's citrus freshness, creamy vanilla and gentle spice make it surprisingly versatile with food. Try it alongside smoked salmon, mature cheddar, roast pork with apple, crème brûlée or an orange-and-dark-chocolate dessert. The citrus character works particularly well with seafood and fruit, while the vanilla, caramel and oak spice complement richer dishes and desserts.
